Ingredients
- 3 cups cooked, diced chicken
- 3 cups cooked rice
- 2 (10.5 oz) can condensed cream of chicken soup (or use cream of mushroom or cream of celery soup)
- 1 cup chicken broth
- 1 onion, diced
- 1 cup diced celery
- 1 cup diced carrot
- 1 ½ cup crackers, coarsely crushed
- 4 tablespoons butter, melted
Instructions
- Preheat oven to 350°F.
- Grease a 9 x 13-inch baking dish and set aside.
- In a large bowl, stir together chicken, rice, condensed soup, chicken broth, onion, celery, and carrots. Transfer to the prepared baking dish.
- In a separate bowl, stir together Ritz cracker crumbs and melted butter. Sprinkle over top of the casserole.
- Bake, uncovered, until hot, bubbly, and golden brown on top, about 25-30 minutes.
